Need one more cup before bed, Los Suaves is the coffee for you. From the beginning we have made it a priority to get decaf coffee that is more than just brown water. This lot of Colombian Sugarcane process is the most coffee tasting decaf we can get our hands on. We picked up notes of orange, molasses and chocolate.

The sugarcane process can also be called ethyl acetate, it starts with molasses made with fresh sugarcane. That molasses is then fermented to great ethanol, that ethanol is mixed with acetic acid to create ethyl acetate. The coffee is then soaked in warm water and mixed with the ethyl acetate and it attaches to the caffeine in the coffee. Now the coffee is virtually caffeine free while still being full flavor.

Ignite is our in-house espresso blend, it is designed to complement milk. With its rich molasses, chocolate and roasted nuts. This is our second darkest coffee, the roast flavor just barely comes through and the finish.

Brazilian coffee is the backbone of Ignite, for the last year or so we have been working with Ocafi. They are a specialty coffee importer out of Sao Paul Brazil and Berlin. Their focus on quality and consistency really shows. Brazil is the second largest coffee producing country in the world. Its unique profile and processing method makes it perfect for a classic espresso experience.

Depending on the season we cycle through washed coffees from Colombia, Peru and Guatemala. They are a small part of this blend but play an important role by adding sweetness and balancing out the sometimes-nutty profile of Brazilian coffee.

We use fresh, local ingredients, all of our eggs are from Alderfer's here in town. We most of our produce from Ray’s Green House. We are very intentional with how we source coffee, supporting programs that help better the lives of young producers, women and the communities surrounding the farms.
